Vegan coconut rice with aubergine and caramelized tofu


Here is my latest recipe! You cannot believe how proud I am about it! Only 25 minutes to make this amazing recipe so do not be lazy, it is worth it!

Aubergines preparation:

- Cut the aubergines in square shapes and plunge them into boiled water for 15 minutes.
- Add coconut powder, 1 teaspoon maple syrup, 1 teaspoon sugar and a bit of salt

Rice:
- Make your own Coconut milk by blending coconut powder, water, 2 plums and sugar.
- Cook the rice into the latter mixture add a bit of salt

Tofu:
- Cut the tofu in thin slices, plunge them into the coconut milk's leftover.
- Oil the pan and cook the tofu till it gets golden and fried

I can assure you it is really tasty. This recipe will satisfy your papillae and your guests!
