Vegan Delicious Ginger/Coco Buttersquash soup



In Hungary at this time of the year butter-squashes can be seen piled up on our market stands and this orangish color made me want to make a soup!

You will need:

- 1 buttersquash
- 2 carrots
- a bit of raw ginger cut in squares
- 1 onion
- a pinch of salt
- bit of water
- a bit of linseeds
- 1/2 cup of coconut milk

-Peeled your buttersquash, carrots and onion in square and put them in a saucepan with water.

-Cook for 15 minutes until the squash is tender.

-Once ready put the mixture (without water) in the blender and add the rest of the ingredients : ginger, salt, water, coconut milk and linseeds. Blend for 5 minutes.
