EGGPLANT/CORN/SOYA SAUCE VEGAN BURGER





Vegan junk food! Here it is! If I'd knew it tasted so great I would have done it before.
It is quite time-consuming but you can reward yourself once your burgers are ready.
I personally love the texture combined with the soya sauce given that everything is home-made, it can only taste better!

Burger Buns:
Mix white flour with yeast, salt, soya milk( 1/5 cup) and water. Stir and let the dough rest for 30 minutes, Bake and cut the buns in two parts.

Burger:
Put the eggplant cut in thin circles in the oven. paint them with olive oil and bake for about 25minutes. Once ready mix together the eggplant circles with 3 tablespoons of hummus, salt, olive oil, corn and parsley. Whizz it up in the blender for 15 seconds.
Create dough with the mixture and place them in the oven for 35 minutes.

Soya sauce : Blend dill with parsley in a soy yogurt and add salt to taste.

after combine them all. I added some ketchup as well :-)
